Country Fair Apple Pie

 

1/2 cup (125 mL) white sugar
1/4 cup (50 mL) pure maple syrup
4 tbsp (60 mL) cornstarch
1/8 tsp (0.5 mL) nutmeg
1/8 tsp (0.5 mL) cinnamon
1/8 tsp (0.5 mL) coriander

Dash allspice
Dash salt
1 tbsp (15 mL) lemon juice
1-1/2 to 5 cups (1250 mL) thinly sliced pared tart apples
1 tbsp (15 mL) water
2 tbsp (30 mL) butter

Directions: May I suggest using the Country Fair Prize Pie Crust recipe. Put unbaked bottom crust into 9 inch pie plate. Prepare filling by stirring together in large mixing bowl, sugar, maple syrup, cornstarch, nutmeg, cinnamon and salt. Stir in apples, water and lemon juice. Turn into pastry lined plate; dot with butter. Cover with top crust, seal and flute. Slit steam vents in top crust. Cover edge with aluminum foil to prevent over browning. Bake at 425°F for 25 minutes, lower temperature to 325°F for approximately 20 to 25 minutes. Remove foil in last 15 minutes of baking.
